Palmirinha cod cake recipe

There are several recipes for codfish cake, but without a doubt that this one by Palmirinha is one of my favorites! This Palmirinha cod cake recipe is special because it is prepared with potato flakes instead of potatoes, so the preparation is faster and more economical!

Ingredients for making Palmirinha codfish cake:

 1½ kilograms of cooked, desalted and shredded cod

 1 cup of chopped fresh parsley

 2 chopped medical onions

 4 chopped garlic cloves

 ¼ cup of olive oil

 3 cups of wheat flour (420 grams)

 ½ cup of potato flakes (50 grams)

 1 liter of water or cod broth

 2 teaspoons of ground black pepper

 2 teaspoons of salt

 frying oil

How to make Palmirinha cod cake:

Start by preparing the cod by desalting it and cooking it in a pan of water or steamed. Then shred removing all the pimples and skins.

Heat a large pan with the oil, onion and garlic. Saute for 1-2 minutes and add the shredded cod. Mix, season with pepper and salt and saute for another 1-2 minutes to get the flavor. Add the parsley only at the end, mix and turn off the heat.

Place the above stew in a large bowl and add the remaining ingredients: wheat flour, potato flakes and water or cod broth. Mix everything well until the dough is at the point where it doesn't stick to your hand.

Tip: Use the codfish cooking broth instead of the water, that way your codfish cake will taste better!

Take portions of the homemade cod dumpling dough and fry in hot oil until golden. Remove to a plate with absorbent paper, let the excess oil drain and you're done! Repeat until the remaining batter is fried and enjoy this potato-free cod dumpling. Enjoy your food!
